Sassagoula Floatworks and Food Factory Beignets

Servings 5 dozen

Ingredients

  • 1 package Dry Yeast
  • ½ c sugar
  • 2 eggs
  • 7 c flour
  • c warm water
  • 1 tsp salt
  • 1 c undiluted evaporated milk
  • ¼ c soft shortening oil for frying
  • Confectioner's sugar

Instructions

  1. In a large bowl, sprinkle yeast over water stirring to dissolve.

  2. Add sugar, salt, eggs and milk and blend with a rotary beater.

  3. Add flour and mix until a dough forms. Cover and chill overnight.

  4. Roll out dough on a floured surface to a thickness of 1/8″.  Cut into 2 1/2″ squares).

  5. Heat oil to 360ºF and fry the beignets for 2-3 minutes or until lightly browned on both sides. Drain on paper towels.

  6. Heavily cover with confectioner’s sugar and enjoy.
