Today, we are making Corn Chowder from 1980s Epcot! This dish comes from a restaurant located in the CommuniCore West building at the EPCOT Center. Let’s dig into this dish and talk about its history before cooking it together!

Corn Chowder

Servings 8 cups

Ingredients

  • ½ c butter or margarine
  • ½ c onion finely chopped
  • 6 tbsp flour
  • 4 bouillon cubes
  • 2½ c hot water
  • 1½ c cooked potatoes cubed
  • 16 oz whole kernel corn undrained
  • 3 c hot milk
  • 1 tsp sugar
  • ¼ tsp white pepper

Instructions

  1. Heat butter in a large pot and cook onion until tender but not brown.

  2. Add flour and stir and cook for 5 minutes over low heat, do not brown.

  3. Add bouillon cubes and hot water, stir to combine fully. Simmer for 5 minutes.

  4. Add remaining ingredients, stir, and bring to a boil.
