Today we have a special treat, a Moana-inpired recipe that will bring that magic into your next dinner or party. This easy recipe uses the slow cooker making it a perfect dish for those busy days. (Scroll down to view our recipe video!)
That Is Good Pork!
Ingredients
- 4 lb pork shoulder Boston butt may also be used
- 2 tbsp brown sugar
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp salt
- 1 tsp pepper
- 1 tsp chili powder
- 1 tsp garlic powder
- ¼ c apple cider vinegar
- ½ c coconut water
- ¼ c water optional
Instructions

Mix all spices in a bowl (brown sugar, cayenne pepper, paprika, salt, pepper, chili powder, and garlic powder).

Rub spice mix over the pork covering each side.

Add apple cider vinegar and coconut water to a slow cooker. (You can also add an additional 1/4 cup of water if liquid is too shallow in cooker.)

Place pork in the slow cooker.

Cook on low for 8 hours.

Shred pork and use in your favorite dish!
Make it your own
We decided to make this pork into sliders and tacos and paired it all with a Bright and Sunny cocktail (find the recipe for this easy and light cocktail here!) – with an island theme of course! Place the pork inside of Hawaiian rolls with your favorite barbecue sauce and pickles for an easy snack or dinner.
Our tacos take a bit of extra work, but are worth the reward! Place a portion of shredded pork on a soft taco and top with red onion, pineapple, jalapeños and garnish with Southwest ranch and cilantro. These tacos pack a spicy kick with a beautiful sweetness from the pineapple and Southwest ranch to cool the tacos down.
