Mama Melrose’s Penne alla Vodka

Penne alla Vodka recipe from Mama Melrose’s Ristorante Italiano

Mama Melrose’s is home to some fabulous Italian dishes from oak-fired mussels and minestrone soup to a magical dessert sampler. If you’re looking for a new Disney recipe to try, this Penne alla Vodka recipe should be high on the list! Packed with flavor and balance this is one versatile dish – add grilled chicken or shrimp for a delicious dinner at home.

BONUS – Mama Melrose’s Ristorante Italiano is home to a wonderful marinara sauce that is great for chicken parmesan, spaghetti or as a dipping sauce for mozzarella sticks. Be sure to keep reading for this tasty recipe!

Ingredients

1/4 cup sweet onion, diced small

2 tbsp pancetta, chopped small

2 tsp olive oil

1 tsp chopped garlic

1 1/2 cup penne pasta

Kosher salt, to taste

Ground black pepper, to taste

4 oz marinara sauce (recipe follows)

2 oz heavy cream

Italian parsley, as needed

1 tsp pecorino romano

2 oz vodka

Directions

  1. Heat oil in pan. Add pancetta, onions and garlic. Sauté until golden brown.

  2. Deglaze the pan with vodka and reduce.

  3. Add marinara sauce and cream. Mix and add pasta.

  4. Serve in a bowl and garnish with cheese and parsley.

Shrimp Penne alla Vodka

Marinara Sauce

Ingredients

1 1/2 lbs diced onions (1/4″ dice)

1/8 cup minced garlic

4 tbsp olive oil

4 tbsp basil, chopped

1/2 tbsp oregano, dried

1/2 tbsp marjoram, dried

1/2 tbsp kosher salt

1/4 tbsp fresh ground black pepper

16 oz crushed tomatoes

16 oz diced tomato

1 can tomato paste

Directions

  1. In a 2-quart saucepan heat olive oil. Add garlic and onions stirring constantly until garlic and onion provide a nice aroma and begins to turn golden brown.

  2. Add basil, herbs, salt and pepper and cook for 5 minutes.

  3. Stir in tomato paste and cook for 5 additional minutes.

  4. Add remaining ingredients and combine. Bring to a boil and cook over medium heat for 5 hours, stirring regularly so the kettle does not burn.
