‘Ohana Pineapple Bread

‘Ohana is home to a one of a kind bread service. This pineapple-coconut bread has a unique taste and is available during both breakfast and dinner dining experiences and are a great way to get yourself into the ‘Ohana spirit. Add a touch of that Disney magic to your next gathering with this delicious recipe!

Ingredients

1 3/4 cups water

1 egg yolk

2 tablespoons shortening

4 1/2 cups high gluten flour

1/2 teaspoon salt

1/3 cup sugar

1 tablespoon instant yeast

Pineapple-Coconut Ingredients

1 cup crushed pineapple

1 cup unsweetened coconut

1 cup sugar

2 tablespoons cornstarch

Pineapple-Coconut Directions

  1. Combine pineapple and coconut in a bowl.

  2. Combine sugar and cornstarch in a separate bowl, mixing well. Add to pineapple and coconut mixture and mix well.

  3. Refrigerate for 1 hour.

Directions

  1. Combine water, egg yolk, shortening, flour, salt, sugar and yeast in a mixing bowl with dough hook until the dough no longer sticks to the bowl.

  2. Let dough rise until it doubles in size.

  3. Roll out dough on a floured surface until 2 inches thick.

  4. Spread pineapple-coconut mixture over the top of the dough.

  5. Fold dough into itself and cut dough into even pieces, place in a greased 9″ x 13″ cake pan evenly spread out.

  6. Let dough rise in warm oven (approximately 110ºF) until about half the height of the pan.

  7. Bake at 325ºF for 20-25 minutes or until golden brown.

  8. Let bread cool, cut and serve.
