Mama Melrose’s is home to many delicious dishes, and when it comes to what elevates each dish, it is the sauce. The four cheese sauce found at Mama Melrose’s is creamy, light, and definitely cheesy! This sauce can be found in the Charred Strip Steak, and in the made-to-order option (guests can choose the type of pasta, protein, and sauce).
Ingredients
4 tbsp butter
1/4 cup flour
1 qt half & half
1 qt heavy cream
1/4 cup Parmesan cheese – finely grated
1 oz Asiago cheese – shredded
1 1/2 tbsp Pecorino cheese – shredded
2 oz Fontina cheese
1 oz garlic – minced
1 tsp olive oil
1/2 tsp kosher salt
1/4 tsp white pepper
Directions
- Melt butter and stir in flour to create a roux, cook over medium heat for 5-7 minutes stirring often.
- In a 4-quart saucepot add olive oil and heat. Add garlic and milk, bring to a simmer. Stir in roux. Add heavy cream and cheese, simmer.
- Season with salt and white pepper to taste.
This is one very simple and versatile Disney recipe that can add a touch of that Disney magic to any dish. Add this sauce to elbow macaroni and serve it with steak, or add it to penne pasta with grilled chicken.
