Be Our Guest: French Onion Soup

Mrs. Potts would be happy if you started your meal in the Beast’s Castle with this soup. And now you can add another Disney recipe to your Fall and Winter collection with the French Onion Soup from Be Our Guest. This cheesy and delicious soup is a favorite in the restaurant, and will now be a favorite at home!

Ingredients:

1 stick Butter

3 lbs Yellow Onions, sliced

1/4 cup Flour

3 quarts Vegetable Broth

3 tablespoons Thyme, dried

1 tablespoon Parsley, dried

2 Bay Leaves, dried

Salt and Pepper, to taste

1 loaf French Bread, sliced thin

10 ounces Gruyère Cheese, sliced

Directions:

  1. Preheat oven to 250ºF.

  2. In a large pot, melt butter and add sliced onions. Sauté until browned, then add flour to form a roux. Gradually add broth, herbs, and bring to a boil.

  3. Reduce heat to low, simmer for an hour. Bake sliced bread until toasted, but not browned. Season the soup with salt and pepper to taste.

  4. Heat broiler. When ready to serve, remove bay leaves and discard. Ladle soup into broiler-proof bowls and top with bread and slices of Gruyère cheese.

  5. Broil soup until cheese is melted, and golden (about 5-10 minutes).
