Whispering Canyon Cafe at Disney's Wilderness Lodge
Pre-heat oven to 350ºF.
Cream together sugar, baking powder, shortening and salt for 5 minutes.
Add flour, buttermilk and eggs. Mix until incorporated.
Add bananas and mix until blended.
Pour into a loaf pan lined with cooking spray.
Bake at 350ºF for 40 minutes or until a toothpick comes out clean.
Cool slightly in the pan, remove and let cool on a rack until room temperature.
Place sugar in a pan over medium heat and bring to a soft ball stage. Reduce heat and whisk in softened butter.
Add sliced bananas and bring to a simmer.
Add buttered rum extract. (Optional: Place in a blender or food processor and purée for a smooth sauce without slices of banana.)
Keep warm until ready to serve.
Combine all ingredients in a bowl. Whisk until well combined.
Slice banana bread into thick slices.
Pre-heat a griddle, add butter to the griddle surface when hot.
Dip the banana bread slices into French toast batter and drain excess off of the slices.
Place onto the buttered griddle and cook until golden brown on all sides.
Serve two to three (2-3) slices of banana bread french toast. Top with bananas foster sauce and confectioner's sugar (or whipped cream, or both!).
