Garden View Lounge Scones

Ingredients

  • 4 c all-purpose flour
  • 3 tbsp baking powder
  • ½ c sugar
  • 1 tsp salt
  • 2 tbsp margarine
  • 2 tbsp shortening
  • 3 eggs beaten
  • c milk
  • 1 c golden raisins

Instructions

  1. Pre-heat oven to 425ºF.

  2. Sift flour, baking powder, sugar and salt into a large mixing bowl.

  3. Rub margarine and shortening into the flour with your fingertips until resembling a coarse meal.

  4. Combine eggs and milk in a separate bowl. Stir into the flour until the dough forms.

  5. Fold in raisins.

  6. Roll dough out to 1/2 inch thickness on a lightly-floured surface. Cut using a 2-inch round cutter and transfer them to a lightly greased baking sheet.

  7. Bake for 10 to 15 minutes or until they are light brown.

  8. Serve with Devonshire cream or butter and jam.
