Making Chicken Divan from 1970s Magic Kingdom

The star of today’s episode is Chicken Divan!

But, before we get to that, let’s dive into the history of this dish. And to do that, we need to take a trip back in time to the Magic Kingdom Park.

King Stefan’s Banquet Hall opened on October 1, 1971 – the same day at the Walt Disney World Resort as a whole! The restaurant was located inside of Cinderella’s Castle, however, it was oddly named after Sleeping Beauty’s father. Although Disney designers have not been able to explain why the restaurant was named after King Stefan, it is speculated that this was to give the restaurant a regal name.

Chicken Divan

Ingredients

  • 4 boneless skinless chicken breasts 5 oz each
  • 6 tbsp butter divided
  • Salt & white pepper to taste
  • 8 trimmed broccoli stalks cooked
  • 4 tbsp flour
  • 2 c milk
  • 4 tsp sour cream
  • ¼ c Parmesan cheese grated
  • Paprika

Instructions

  1. Lightly brown chicken breasts in 2 tbsp of butter. Season with salt and pepper to taste.

  2. Arrange broccoli in casserole dish with buds facing the outside of the dish.

  3. Arrange chicken over the broccoli.

  4. In a saucepan, heat remaining butter. Add flour and cook for 2 minutes. Gradually add milk and stir until it comes to a boil.

  5. Add sour cream and season with salt and pepper to taste.

  6. Cover chicken with cream sauce, parmesan cheese, and paprika.

  7. Bake at 350ºF for 20 to 25 minutes.
