During the 20th celebration of the Epcot Food and Wine Festival, several new booths were added. One of which was the Chew Lab that featured olive oil-poached salmon, New York strip, smoking hibiscus and the one liquid nitro chocolate-almond truffle. This is certainly one booth to ask for everything on the menu! Today, we are talking about that one item you raised your eyebrow to, the liquid nitro chocolate-almond truffle.

While you wait impatiently for your intriguing item to be prepared, you watch as the chef drops the truffle into liquid nitrogen freeing the outside, crushing it open and topping it off with warm whiskey-caramel sauce.

The outer shell to the truffle is crisp but soft and smooth, encasing a decadent chocolate and almond mousse like filling. However the true star on this dish is the warm whiskey-caramel sauce. This brings the flavors completely together to make one decadent and savory dessert.

We hope that The Chew will join in on the 2016 Food and Wine Festival celebrations and brings back this liquid nitro chocolate-almond truffle back to EPCOT this fall along with the rest of the delicious menu!
