When spending the day in Disney’s Hollywood Studios, there’s one special place to go when you find yourself craving a delicious meal and that’s The Hollywood Brown Derby. This landmark location is steeped in glitz and glamour where its upscale atmosphere showcases the Golden Age of Hollywood. The Brown Derby serves a variety of signature dishes including Cioppino, Char-Grilled Filet of Beef and the famous Cobb Salad.
The Cobb Salad at the Hollywood Brown Derby follows the recipe created by Bob Cobb, the owner of the historic California Brown Derby. This salad, which is enjoyed by the masses around the world today, was created by Bob Cobb inside of the California Brown Derby. It’s only fitting to enjoy one of these iconic salads at the authentic replica inside of Disney’s Hollywood Studios.
We’ve managed to secure the recipe for this classic salad so that you can enjoy in your own home!
The famous Cobb Salad from the Hollywood Brown Derby
- ½ head iceberg lettuce
- ½ bunch watercress
- 1 bunch chicory small
- ½ head romaine lettuce
- 2 medium tomatoes blanched & peeled
- 1½ c cooked turkey breast diced
- 3 hard-boiled eggs
- ½ c blue cheese crumbled
- 6 strips crispy bacon crumbled
- 2 tbsp chives chopped
- ½ c water
- ½ tsp sugar
- 1¼ tbsp salt
- 1½ tsp Worcestershire sauce
- 1 clove garlic chopped
- ½ c red-wine vinegar
- ½ lemon juiced
- ½ tbsp ground black pepper
- ½ tsp English mustard
- ½ c olive oil
- 1½ c salad oil
Chop all greens very fine (reserve some watercress for presentation) and arrange in salad bowl.
Dice tomatoes (seeds removed), turkey, avocado, and eggs.
Arrange the above ingredients, as well as the blue cheese and bacon crumbles, in straight lines across the greens.
Arrange the chives diagonally across the above lines.
Present the salad at the table, then toss with the dressing
Place on chilled plates with a watercress garnish.
Blend all ingredients except oils, then add olive oil and salad oils and mix well.
Blend well again before mixing with salad.
