Habanero-Brown Sugar Chicken Wings: Shutters at Old Port Royale

For a true hidden gem at Disney World, take a trip to Shutters at Old Port Royale. Located at Disney’s Caribbean Beach Resort sits a small table service one dining credit option. One of the most popular dishes at Shutters is the appetizer of Habanero-Brown Sugar Chicken Wings. When tasting these wings you are first immersed with the sweetness from the brown sugar, but do not be fooled, because the kick from the habanero comes quickly! So hold on tightly and take a bite into these wings!

Habanero-Brown Sugar Wing Sauce:

8 oz brown sugar

3.5 oz roasted red peppers

2/3 oz habaneros

1/8 tsp salt

In a food processor, puree raw habaneros and roasted red peppers with salt. Add the brown sugar to the puree and process until blended together.

Marinade:

3.5 oz roasted red peppers

3/4 oz habaneros

1/4 oz brown sugar

1/16 tsp crushed red pepper

1/3 tsp salt

1/16 tsp white pepper

1 pinch granulated garlic

2.5 oz canola oil

6.5 oz water

In a food processor, puree all ingredients together except water and oil. When blended, add water and oil. Toss the wings in marinade and refrigerate for 24 hours.

Deep fry the wings until cooked through. Drain and toss in wing sauce and serve with blue cheese dressing.
